LK's Famous Mashed Potatoes

Ok... so I'm sort of a mashed potato connoisseur. It's always been my thing. Mashed potatoes can be a comfort food that you whip up or the star side on your dinner table. They should be buttery, creamy, salty, and full of flavor. This recipe is a no-brainer for mashed potatoes.
YIELDS: 4-6 servings TIME: 35 MINS
INGREDIENTS:
6 medium gold potatoes (peeled & halved)
1/3 cup heavy cream
1 tbsp sour cream
2 tbsp butter
2 twigs fresh thyme
Salt & Pepper
Optional: 1/2 cup goat cheese
INSTRUCTIONS:
Place potatoes in a medium-sized pot and pour in water until potatoes are covered. Bring water to a boil, and cook until fork tender. Do not over boil.
Over low heat, warm heavy cream, butter, and twigs of thyme in a small sauce pan.
Once potatoes are tender, remove from water, making sure to drain all water before adding to a large bowl.
Remove thyme from sauce pan and pour warmed heavy cream and butter in the potatoes.
With a hand mixer, mix the potatoes, heavy cream, and butter together. (Add goat cheese here too if desired)
Add sour cream, salt, and pepper to taste. Mix again until there are no lumps.
Garnish with chives and flaky salt, if desired.
*If you'd like to really fancy these up, add some chunks of goat cheese in while mixing. Top with a few goat cheese crumbles and chives.
