Burrata, Cherry & Peach Salad

This bright dish is perfect for a light dinner or served as an appetizer with toasted baguette slices! Show off the best summer has to offer in this beautiful plate.


YIELDS: 2-3 TIME: 10 MINS


INGREDIENTS:

  • 2 peaches, sliced into 1/2 inch slices

  • 1 whole burrata

  • 6-8 pitted fresh dark cherries, halved

  • 10 Sungold cherry tomatoes, halved

  • Fresh basil

  • 2 tbsp extra-virgin olive oil

  • juice of 1/2 lemon

  • 1 tbsp hot honey

  • 1 tsp Dijon mustard

  • pinch of red pepper flakes

  • pinch of salt and pepper



INSTRUCTIONS:

  1. On a large plate or platter, strategically lay out peach slices, cherry halves, and cherry tomatoes.

  2. To a bowl, mix olive oil, lemon juice, hot honey, Dijon mustard, red pepper flakes, salt, and pepper, until fully combined. You may also place in a mason jar and shake thoroughly.

  3. Drizzle dressing over the plate.

  4. Rip apart by hand the burrata and fresh basil and place on top of the fruits and tomatoes.

  5. Garnish with freshly cracked black pepper, if desired.


Serve with crusty baguette slices for an appetizer.
