Saturday Morning Pesto Eggs

My go-to for a quick, fulfilling, and simply beautiful breakfast that hits the spot every time. The recipe makes one, but I typically always eat two - it's just that good.






TIME: 10 minutes YIELDS: 1 serving



Ingredients

  • Egg

  • 2 Tbsp Basil Pesto (whichever you like)

  • 2 Tbsp whole milk ricotta

  • 1 Tbsp butter

  • 1 Slice Sourdough Bread

  • Lemon Juice for garnish

  • Chives for garnish

  • Fresh cracked pepper for garnish



Instructions


  1. Over medium-high heat in a non-stick skillet, add butter and pesto to melt slightly - crack egg directly over pesto. Cover with lid to cook until desired.


  2. Toast bread and spread ricotta cheese evenly on top of top. Drizzle lemon juice over ricotta cheese.


  3. Top toast with egg, remainder of pesto, and garnish with salt, pepper, and chives. Serve immediately.
