Salted Caramel Banana Bread

This recipe was developed after my local grocery store gave me 3 bunches of bananas instead of 3 individual bananas. After giving some to family and neighbors, and freezing some for smoothies, I was still left with too many. I threw together the most delicious, moist, and simple banana bread recipe that turned out to be my favorite loaf I've ever made!



YIELDS: 8-10 servings TIME: 1 HOUR


INGREDIENTS:

  • 4 ripe bananas

  • 1/2 cup melted butter

  • 1/2 cup olive oil or vegetable oil

  • 1/2 cup white sugar

  • 1/2 cup brown sugar

  • 2 eggs

  • 1 tsp vanilla

  • 1 tsp cinnamon

  • 1/2 cup Greek yogurt (plain or vanilla)

  • 1 1/2 cup AP flour

  • 1 tsp baking soda

  • 1 tsp salt

  • 3/4 cup salted caramel chips


INSTRUCTIONS:

  1. Pre-heat oven to 350 degrees. Grease a loaf pan and line with parchment paper.

  2. To a large mixing bowl, mash 3 bananas until mushy. To the bowl, combine butter, oil, sugar, brown sugar, eggs, vanilla, cinnamon, and yogurt. Mix in with bananas until fully incorporated.

  3. Adding in dry ingredients, fold in flour, baking soda, and salt until just combined. Do not over mix.

  4. Gently fold in salted caramel chips.

  5. Carefully pour into loaf pan.

  6. To top, slice the last banana longways and place each half on top of the mixture.

  7. Bake for 40-55 minutes, until a poke with a toothpick is clean and the top is golden.


Enjoy for dessert with vanilla bean ice cream or with some vanilla yogurt for breakfast!
